About Restaurant Rökeriet
You will find Fjäderholmarna only 25 minutes by boat from Stockholm City. You can depart from Slussen ( Old town) or from Strandvägen Pier 14. Peak season the boats depart every half hour. When arriving to Fjäderholmarna the restaurant is located just a few steps from the boat.
We offer both a café/deli and an á la carte restaurant. Our famous smoked prawns and salmon is prepared daily in our own smokery. The menus are composed by Chef Anton Levin.
The smoking procedure
Smoking is an old method of preservation but nowadays it´s mostly used to flavour the food. It´s a form of slow cooking and at the same time a chemical treatment. The smoking prevents oxidation and the process gives a flavour of burned wood. Different kinds of wood give different flavours to the fish. Here we use a mix of alder and juniper wood. Before the smoking process we put the fish in salt and sugar. We are using two kinds of smoking. Cold smoking at a low temperature for 1-8 days and warm smoking at 65 degrees for 2-4 hours.
